I spent years studying how the brain perceives taste — starred kitchens, research published in Nature, hundreds of tests. In the end, there’s no magic recipe for everything. It comes from memory, context, culture, narrative.
Here we test everything. But we only keep what survives Bairro Alto, this room, these tables, and the people who visit us.
